When asked what I wanted the wine to taste like,
I transported myself back to 2009 when I spent my first Christmas in France; I spent it with the Firadets, my soon-to-be French/American besties, in the hamlet of Quenoche in the Northwest corner of France. The matriarch, Lulu, filled our bellies with the most delectable, multi-coursed, rustic French country cuisine.
With snow on the ground, a fire burning in the hearth, and a heavenly aromatic hen roasting with mushrooms foraged from the surrounding forest wafting in the air, it was an incredible once-in-a-lifetime sensory experience. Never to be duplicated in exactly quite the same way again, but the feeling would remain.
I set out to make a wine that went with that.
Because of Eyries’ commitment to healthy soils, this wine was produced with minimal intervention or manipulation.
100% whole cluster, pigeage aux pieds, and gentle punch downs, then aged for over two years in a neutral oak barrel from 1983; this wine is rustic. Herbaceous, dark berries, deep cherry, forest floor, and fresh earth.
